Every time we order Asian food, I’m lucky if I can get my hands on one of those cookies. Kids make them …. disappear. Ugh. Well here is an easy recipe to recreate them. The hard part is knowing when to take them out of the oven. It’s a fine balance between under and over-cooked. One will give you a moist cookie and the other will be too hard to shape and snap. With practice, it gets easier 😉
These cookies are similar to the ones you get in a restaurant but they are thinner. You could try with more dough and see if you achieve the same result.
You need ( makes about 10, just double if needed)
- 1 egg whites
- (optional) mini dash almond extract
- dash vanilla extract
- 1tbsp water
- 47g flour
- 38g melted butter
- 45g white sugar
- pinch salt
Instructions
If you wish so, prepare some small messages to insert into the cookies.
Preheat oven to 350F
- In a stand mixer, whisk the egg whites with the vanilla extract and sugar for 2 minutes. Add the butter and water and whisk for about 10 seconds so it’s all mixed in. Add the flour and whisk until it’s all blended in ( when you don’t see any flour left in the mix), do NOT overmix.
- Cover a baking sheet with a Silpat (parchment paper works but may stick a little)Â and dump 1 tbsp of your dough mixture into the Silpat Using the tablespoon flatten the mix to create a circle of about 3″ wide. Repeat with a second one. Try your best to make it equally flat so it cooks evenly.
- Note: unless you have helpers I do not suggest you do more than 2 at a time because they will solidify before you have a chance to mould them.Â
- Bake for about 7 minutes until the edges start to brown.Â
- Using a spatula ( fish spatula work great), remove 1 of the flat cookie from the tray, flip it so the surface that was on the tray is now facing you, add the message in the middle and fold in half and press the edge a little. Then using a glass or mug, refold the other side. At this stage, you should have the traditional Pacman-shaped cookie. Since they aren’t fully set, place them into a muffin tin. This way they won’t deform.Â
- Repeat for the remaining mixture.Â
If you undercooked them and they are still a little soft, put the muffin tray with the cookies in the oven at 300F for 7-8 minutes. If you have air-fry it works really nice to remove excessive moisture.
