(Experiment 295) Berry coulis

Making a coulis takes about 15 minutes and you can use whichever berry you like ( blueberries, strawberries, raspberries etc). This brings up by a notch every dessert you will serve to your guests.

You need

  • ~1 cup of berries fresh or frozen*
  • 1tbsp sugar
  • dash of lemon juice

*I personally prefer to use frozen berries, they are sweeter

Instructions

  1. In a pot combine all the ingredients and heat over medium-low heat. Let this cook for about 15 minutes while stirring occasionally. Once done, using a stand mixer blend the mixture as much as possible but no need to be crazy as we will strain it in minutes. Give it a taste test, if it’s not sweet enough add a bit more sugar and stir. Dump the content in a strainer and press it down with a spoon to collect as much juice as possible.
  2. Store in the refrigerator for up to a week. It will turn into a “gel” just stir it up and it will go back liquid-ish.
