(Experiment 219) Alex lasagna

Alex lasagna is something I created when I was a broken teenager. I’m documenting this solely for posterity, which is at your own risk. I had nothing except a small tub of tomato sauce, cheese and only a few slices of lasagna pasta; not even enough to do all the layers.

Originally the extra random pasta ( bows,penne etc) where to compensate for the missing strip of lasagna. For whatever reason, I kept adding extra pasta even if I had the right amount of strips.

You need

  • 400-500g mozzarella cheese
  • ~400g marinara sauce* ( you can use bolognese or whichever you have )
  • 6 strips of lasagna pasta
  • a handful of pasta ( whichever leftover you have rotini, bows.penne )
  • parmigiano reggiano
  • Salt

    *You can either make your own but at Costco they sell 2x 1L white linen marinara sauce, cheap and good

Instructions

  1. I like to blend a bit more the sauce from Costco so there are no chunks. Be careful not to blend too much or you will end up with a watery sauce.
  2. Preheat oven to 425
  3. Heat on high a large pot with water. Once it boils, throw a tablespoon of salt in the water and add all the pasta. Cook for 5 minutes.
  4. While the pasta is cooking, grate your cheese.
  5. When the timer is up on the pasta, drain the water
  6. Using a Pyrex, put a thin layer of sauce on the bottom, and add 2 strips of lasagna to make a bottom. Add another thin layer of sauce and cheese.
  7. Add another layer of lasagna pasta + all the random pasta you cooked. Cover with sauce( a bit more sauce here but not too much) and cheese.
  8. Add the last layer of lasagna pasta and another thin layer of sauce. Then put all the mozzarella cheese on top.
  9. Grate a generous amount of parmesan on top and put in the oven for 20-30 minutes on the bottom rack.
  10. It’s ready when the top is broiled.

    You can make 2-3 lasagna simultaneously and freeze them. Just wait till they cooled down, cut them in pieces and put them in plastic wrap. To reheat if you can put it in the oven or if you are in a rush for a quick lunch, blast it in the microwave for 2m30.
