Cream the butter in a stand mixer then add the sugar. Once combine, add the oil, egg, honey and apple sauce.
In another bowl, combine the flour, oat, baking soda, cinnamon, nutmeg and salt. Slowly add them to the stand mixer, you can also do it fast but it will splash over your kitchen. Finally, add the chopped apple.
Preheat oven to 375F.
On a baking sheet, lay parchment paper and put some of the oatmeal mix. I use a spoon and just wing it but you could use an ice cream scoop to make each portion the same. With this mix, I do 10 cookies spread over 2 baking sheets.
Cook for ~18 minutes, if you use 2 baking trays at the same time using convection is recommended. You may need to add a few more minutes. Note that they keep cooking once they are out of the oven so don’t overcook.
