In a bowl, stir together the flour, baking soda & powder and salt.
Put the butter in the dry ingredients and using a pastry blender, cut it in. You can also do this step using a food processor.
Add almost all buttermilk to the mix and stir. You are looking for a sticky consistency. Add more buttermilk as needed
Lightly flour your countertop and put the dough on. Using a rolling pin, roll it down just about an inch thick. Using a cookie cutter or a glass or even your hands, shape up some pieces and line them in a baking tray with parchment paper. Repeat with all the dough. You can ball up and roll down again the leftover dough.
Note: Do not place them too close to each other or they will merge together
Bake at 450F for about 12 minutes or until lightly coloured

Optionally but highly recommend brushing them with some melted butter before serving
