In a stand mixer, cream the butter(using the leaf) and add the sugar. Mix until combined
Add the egg, vanilla extract and orange zest and mix
Warm the milk in a pot on the range or blast it in the microwave for about 20 seconds. Once it’s warm add the ammonia carbonate and stir well. Add it to the stand mixer bowl
Add about half the flour and mix until it’s combined. Add another half and again mix. Repeat with remaining flour. The dough should be tacky but not sticky
Cover with plastic film and let it rest for 30 minutes
At this point preheat your oven to 400F
Dump the dough on your work surface. Take a piece of the dough and roll it with your hands, it will make a long roll. You can make whatever shape you fancy but traditionally they are twisted ( as pictured). Line the dough in a baking tray covered with parchment paper. Repeat for remaining dough. Make sure not to put each dough next to each other as they will double in size. Brush some of the egg wash on top of each dough. If you want, sprinkle some sesame seeds on top
Bake for 15-20mins or until golden
Remove from oven and let cool on wire rack. Once cooled make sure to store them in an airtight container.
