In a stand mixer bowl combine the yeast with the milk and let it bloom for 5 minutes. While you wait melt the butter and let it cool. Combine the 2 flour, sugar and salt in a separate bowl.
After 5 minutes, add the flours mix and start kneading with the dough hook. Once it’s mostly combined pour in the melted butter. Knead for about 7-8 minutes until smooth ( knead by hand to finish ?). The dough should be tacky but not sticky ( adjust flour or milk if needed)
Make a ball with the dough and place it in a container or simpler just dump it back in the stand mixer bowl, cover with plastic wrap and let it rest at room temperature for 2 hours.
Take the dough out of the bowl and cut them into pieces. I like to cut it in half and make about 5 with each half ( 10 total). Ball up each cut and place onto a baking tray covered with parchment paper. Cover with a clean dishcloth and let them rest for a final rise for about 30 minutes.
Preheat oven to 400F.
Once the time is done, beat the egg with a little milk or water and brush the top of the dough. Bake for 12-13 minutes.
