You need

  • 3-5 Salmon filets ( about 250g each)
  • 1/2cup Thai chilli sauce ( see recipe here )
  • 1-2 bell pepper chopped ( pick whichever color you like)
  • 1/4cup soy sauce
  • half lime juice
  • grated ginger ( about a 1-inch piece will work)
  • chilli flakes
  • veggies of your choice ( sugarsnap/snow peas, carrots, onion, etc)
  • fresh cilantro and/or 1-2 green onion chopped and/or sesame seeds for garnish

Instructions

  1. Preheat oven at 375F
  2. Cover a baking sheet with parchment paper
  3. Lay the salmon and the veggies on it
  4. In a mixing bowl, combine the ginger, lime juice, soy sauce, sweet chilli sauce and chilli flakes. Using a brush cover the salmon and vegetable with the sauce. Keep a little bit to do a final brush
  5. Cover your tray foil and bake for 15 minutes( if you like it well done bake it 20) . Discard the foil and bake for another 10 minutes. Note that cooking time will vary greatly depending on the thickness of the filets. The timing here is for thick one
  6. Remove from oven, brush the remaining sauce on the salmon and serve
